Abstract
Über die speziellen Arbeitsbedingungen in Kleinbetrieben ist nur wenig bekannt. Das vorliegende Projekt hatte zum Ziel, die Belastungsstrukturen im Fleischer-Handwerk zu untersuchen und gegebenenfalls Vorschläge und Maßnahmen zum Abbau dieser Belastungen zu entwickeln. Als eine wesentliche körperliche Belastung stellte sich das manuelle Handhaben von Lasten heraus. Hohe Prävalenzen von Beschwerden im Haltungs- und Bewegungsapparat wurden in der Befragung gefunden. Kälte, Temperaturschwankungen und Zugluft wurden als klimatische Belastungen häufig genannt. Zugluft wurde dabei als besonders belastend bewertet. Häufige Erkrankungen der Atemwege deuten auf einen Zusammenhang mit dem Klima am Arbeitsplatz hin. Ergonomische Defizite zeigten sich insbesondere bei der Einzelarbeitsplatzbeleuchtung an Maschinen. Zeitdruck, Streß, hohe Konzentration, Überstunden und Störungen des Arbeitsablaufes sind die häufigsten psychischen Belastungen.
At present it is estimated that 40 to 50% of the workforce in Germany is employed in smallscale enterprises. Not much is known about occupational health and safety problems in these enterprises. The aim of the present study was to investigate the work environment in the butcher's craft and to develop measures for the reduction of stress and strain at the workplace. Manual material handling turned out to be an essential physical stress factor. High prevalences were found for musculoskeletal disorders. Cold, draft and and alterations of air temperature as well as complaints in the respiratory system were reported frequently. Particulary draft was named as a climatic stress factor. Ergonomic deficits were found with the lighting especially for machine operators. Among the psychological stress factors time pressure, stress, overtime and disturbances of the work process were prevailing.
